Koh Tao is a big party island these days - lots of people go there now just to hang out rather than for scuba diving like it was a few years ago. There are lots of restaurants, bars etc so there's plenty to do in the evening. It's easy to get away from the party scene and have some peace and quiet too. I wrote about this a while ago - Koh Tao: It's Not Just For Scuba Divers Anymore
It has a beautiful white sandy beach and crystal clear water. Lovely place to be resting and relaxing. Trekking around the island is one thing you can do, looking for viewpoints to watch sunset and sunrise. Many hotels around the beach to meet up other people.
Otherwise, evenings, you might want to consider overnighting in other places to party the night, like Phangan or Samui. Just note the boat timings to be back.

There is plenty to do.
First time I went there, it was all peace and tranquility, but now it's fully developed offering activities both day and night, with and without alcohol.
